Quinoa Salad
I've brought this salad to bookclub on more than one occation. It's a great addition to potlucks, and keeps well since it can be served cold!! Try this out and let me know what you think!! :) I cooked 1 cup of Quinoa in low sodium broth...while that was cooking I roasted @350 degrees.... 1 large zuccini chopped 1 large tomato chopped and 1 small red onion chopped they were roasted in a sauce made of 2Tbsp of Olive Oil 2Tbsp of Balsamic vinegar 1Tbsp Crushed Garlic 1Tsp of Thyme Once the quinoa is cooked and the veggies are roasted, mix everything together and serve!!! Easy Peasy!!
Make it a meal but topping with your choice of lean protein. If you have a food prep day, this will be super easy and quick!!
