Healthy "CHINGERBED" Cookies
Haley and I have been on a mission, baking up a storm, and testing recipes for some KEEPERS!! Just so you know, nothing makes it to my blog without being tested and approved by the whole family :)
I LOVE gingerbread cookies, but have never found a healthy recipe that was close enough to the real thing to bother...these ones are a hit. I know if my daughter acutally eats a whole cookie, it's a gooder !!! These now have a new name according to my daughter...they will called "CHINGERBED" cookies in our house for the rest of time :)
HEALTHY GINGERBREAD COOKIES
Ingredients:
1 Scoop of Vanilla Protein Powder
1.5 Cups of Almond Flour
1 Cup of Sweetner
1 tsp of Baking Soda
1 tsp of Cinnamon
1 tsp ground Ginger
2 egg whites
2 Tbsp of Low Cal Syrup ( I used Walden Farms)
1/4 Cup Coconut Oil (Melted)
Preheat Oven to 350 Degrees. Mix all ingredients and form into 12 cookies. Bake for 6-10 Minutes. I baked for 7 minutes because I like them chewy!! You can sprinkle a little additional sugar on top to make them look sparkly like the picture.
